Zesty Lemon "Cheesecake" Pudding with Blueberry Sauce
Pudding Ingredients:
2 Cups Raw Cashews
2 Cups Raw Pecans
1 Cup Cashew Milk (Or nut milk of choice)
1 Cup Cashew Butter
1 TBS Lemon Zest
2 TBS Coconut Sugar
1 tsp Vanilla Extract
Juice of 4 Large Lemons
Pinch Salt
Pudding Instructions:
1. In a food processor blend ingredients well then scoop into glass storage container.
2. Chill before serving.
Blueberry Sauce Ingredients:
1 Cup Frozen Blueberries (Or berries of choice)
¼ Cup Cashew Butter
¼ Cup Cashew Milk (Or nut milk of choice)
1 tsp Lemon Zest
Juice of 1 Large Lemon
Blueberry Sauce Instructions:
1. Combine all ingredients in a food processor and blend until smooth.
2. Store in refrigerator.
Note: Will hold in the refrigerator up to five days.
Prep time: Approx. 10 Hour
Yields: Approx. 6 Servings
