Raw Kale Salad

Raw Kale Salad

Ingredients:
14 Oz Kale (about 1 large or 2 small heads)
½ cup Pumpkin Seeds
2/3 Cups Raisins or cranberries
4 Tbs Olive Oil
1/2 Tsp Garlic Powder
1/4c Lemon Juice
1/2 Tsp Black Pepper
2 Tbs Honey
1/2 Tsp Sea Salt

Instructions:
1. Tear out hard rib of each kale leaf. Cut leaves in half length wise and then in 1/4 inch strips diagonally. Rinse and spin in a salad spinner to dry.
2. To make dressing, stir lemon juice, olive oil, honey and seasonings together in a bowl.
3. Mix together kale and dressing, massage dressing into kale leaves to tenderize. Mix in pumpkin seeds, raisins or crasnberries and half the cheese.
4. Let stand for 20 minutes before serving.

Note: Will hold for 1-2 days in the fridge.

Prep Time: Approx. 10 Minutes
Yield: About 4 large or 8 small servings.
