Mango Jicama Salad

Ingredients:
1/4 Cup Minced Red Onion
4 TBS Fresh Lime Juice
1/4 tsp Red Pepper Flakes
1 Ripe Mango, Diced
1 1/2 Cup Fresh Pineapple, Diced
1 1/2 Cup Jicama, Diced
1 tsp Minced Garlic
1/2 tsp Salt
2 TBS Minced Fresh Cilantro
2 TBS Minced Fresh Mint
1/2 tsp Ground Cumin
1/4 tsp Ground Coriander

Instructions:
1. Combine all ingredients together in a large bowl.
2. Mix gently but thoroughly.
3. Cover and chill for at least two hours before serving

Note: Holds in the fridge up to 4 days.

Prep Time: Approx. 30 minutes
Servings: Approx. 4-6 servings
