Large Bed of Leafy Greens
1 Medium Sweet Potato, Cubed and Roasted
6-8 Whole Kalamata Olives
1 Beefsteak Tomato, Chopped into Large Chunks
6-8 Quartered Artichoke Hearts
2 Eggs, Hard Boiled
Large Handful Green Beans, Cooked to Preference
Garnish with Red Onion and Sliced Radishes
Top with 6-8 oz Of Seasoned Pan Seared Tuna
1. Preheat oven to 350 degrees
2. Peel and cube sweet potato, dust with cinnamon and roast in oven about 25 minutes or until tender
3. Chop your greens and arrange on a large platter.
4. Top salad with all ingredients and dress with your favorite dressing.
